Wyntyrd is right. Lawful Good characters defy authority figures if they believe the authority's actions will bring harm, whether it's outright evil or just being misguided in some way.

I mean I understand there are a lot of semantics arguments intrinsic to the Alignment system as a whole, but that's a fairly basic concept

Cap's initial actions to enlist wasn't due to him thinking the law was misguided or corrupted. From the door, he had his own code of conduct.

Yeah, his first fight with the Guardians of the Galaxy showed him using the Reality Stone exclusively when beating them.  Later, he uses the Reality Stone to show Strange what Titan used to look like.

There’s always going to be some amount of downplaying the power of omnipotent weapons like the Infinity Gauntlet in combat, either through plot or lazy writing. Otherwise Thanos would just kill his enemies with a snap of his fingers.

I think it was Honest Trailers that pointed out that it wasn't so much as downplaying the gauntlet's powers but downplaying the potential of the other characters.

Hulk's presence quickly became non-existent to the plot.
Same with Loki when he ridiculously tries & stab Thanos.
And Strange never once attempts to use a portal to seperate the gauntlet from Thanos' arm.
