I’m assuming it’s his kids who are making these decisions?

It’s a little weird that his long-time caregiver who was fired was playing the role of adopted child while his kids were seemingly out of the picture.

That's the thing. They've all been fired and pushed away by this "new" caretaker. Max (his lawyer/manager) was fired and hasn't been allowed to see him. His cellphone has been taken away. His longtime housekeeper and gardener have both been fired. He's being secluded by whomever is pulling the strings.

He'll be dead within 6 months.

My guess? His daughter is afraid Stan is leaving this Max guy a chunk of change in his will and is trying to cut Max out of the picture. It might be because she is a greedy bitch, or it might be because she has legitimate concerns that Max is manipulating her dad.

By all accounts, Max has been nothing but exceptional to Stan (and Joanie) for over a decade.
