IIrc correcly fist time he's encountered Wolverine some Hand ninja noted how Cap did know some esoteric martial art.
And Wolverine hilmself was impressed about Cap's skill during the Origin run.
It makes sense the guy is able to create his own fighting style just using basing stuff.

The way i make sense of moments like that (and i dont expect anyone to agree with me, its just how -i- see Cap), is in real life, a writer or writers assigning mad skills to Cap he shouldnt really have and doesnt actually need, and in-universe, esoteric being used in its actual meaning; not necessarily fancy, but obscure.
Cap's hybrid style (judo, boxing, his shield, and pretty much superhuman strength and speed) would definitely be something other MAs would never have seen before.
